Most of the bronze guides I have seen are a little to small already and need to be honed to give the proper clearance. Trying have a close clearance with the bronze guide is not a good idea at all....

Assuming SS valves and Bronze / Mag guides and the clearances Kas recommends, what about installing valve seals to lessen oil burning?

Sure, use them, but just on the inlets. The leakage might make a lot of smoke without the seals but not much in volume. I can always read it on the spark plugs though.
